We are thrilled to announce that guest chef, Jerry Mai will be teaming up with Flemington’s Executive Group Sous Chef Matthew Haigh to curate feature dishes in The Members' Atrium Restaurant (Tiered and Flat), The Chairman's Club, Committee Room and The Terrace restaurant on Black Caviar, The Great Horse Raceday. As well as creating a pop-up restaurant on Flemington’s Front Lawn inspired by her authentic South East Asian dishes at her brand new restaurant, Annam.
Jerry Mai was one of the first chefs to bring authentic Vietnamese flavours to the heart of Melbourne 20 years ago and has continued over the years to become one the leading culinary leaders in Melbourne with her paddock to plate ethics and no fuss attitude.
Jerry’s cooking tells her family story through her flavours. The food is predominantly Vietnamese, with more than a little inspiration from Thai and Cambodian cuisine. Jerry’s food is inspired by the places her parents were born, raised and lived before settling in Australia with her 2 brothers in the 1980s.
She spent her early years at some Melbourne’s best renowned Asian-inspired restaurants including Longrain, Seamstress and Gingerboy. In 2014 Jerry teamed up with her brother to create Pho Nom to share the flavours of their family kitchen with Melbourne. Pho Nom took your fast food service to another level with quality of restaurant food served with the speed of a food court.
Fast forward three years, and we have seen the restaurant incarnation of Jerry’s family history, culture and training with Annam Restaurant and Bar opening in Chinatown September 2017. The menu displays flavours of Vietnam, Thailand and Cambodia with a drinks list that match the smoky and spicy flavours. Annam is really set to change the way Melbourne thinks about Vietnamese food and Jerry is primed to drive this change.
